Learn more about the eating labels According to Dagrofa Foodservice, the day is filled with inspiration and new knowledge for the Danish foodservice industry, and as part of the effort to increase focus on organic raw materials, a team from the Organic Association invites guests to visit a blooming biodiversity field. "Biodiversity is under pressure, and organic farming is an important part of the solution. When you choose organic raw materials and work with the Organic Eating Label, you help create better conditions for bees, ladybugs, spiders, and many other species that are crucial for nature's balance," says Rita Ramona Høgh, project manager for the Organic Association's work with the Organic Eating Label. Today, more than 3,600 professional kitchens have the Organic Eating Label. Three out of four labels hang in public kitchens, and Rita Ramona Høgh hopes to engage more private sector kitchens at the Dagrofa fair. "The Eating Labels are the best way to demonstrate to guests that you serve organic food, and our experience shows that most kitchens already using some organic raw materials are often closer to achieving an Eating Label than they think." A packed program Last year, 'Madscenen - for professionals' attracted over 1,700 visitors, and Asger Rothenborg, sales and marketing director at Dagrofa Foodservice, also has high expectations for this year's event: "Our goal is again to be good hosts for a valuable day of inspiration, where we gather a large part of the Danish foodservice industry. Therefore, we have put together a packed program of culinary masterclasses, where skilled chefs in the country's professional kitchens can update their knowledge on good raw materials, local producers, and craftsmanship techniques." Nordic Academy of Culinary Leisure, Plant-Based Knowledge Center, and Landsorten will ensure that guests learn about upcycling, plant-based dishes, and organic grain varieties through presentations. Participation is free At the inspiration fair, you can, as usual, meet Dagrofa Foodservice’s own specialists from companies such as Grambogård, HKI Ost, Grøn Fokus/CHI Foodsupply, and Prima Frugt, who will offer tastings of pork with two animal welfare hearts and fresh organic herbs. The Food Bank participates as a partner and collects surplus food from exhibitors, which is then distributed to social organizations preparing meals for people in vulnerable situations, according to Dagrofa Foodservice.
